Why Are Americans Buying Korean Kimchi Refrigerators Even If They Don’t Eat Kimchi?

Korean kimchi refrigerators are gaining attention in the United States for an unexpected reason. Some American consumers are buying them even though they do not eat kimchi at all.

In customer reviews, some buyers say they purchased these refrigerators to store meat, vegetables, and fruit. Others use them to keep drinks and even wine.

At first, many Americans found the idea of a separate refrigerator just for kimchi difficult to understand. Why would anyone buy an extra appliance for a single Korean food?

But after trying one, some consumers discovered that a kimchi refrigerator could be useful for much more than kimchi. They began using it as a multi-purpose refrigerator for everyday groceries.

So how did a Korean appliance designed to preserve kimchi find a new purpose in American homes?

The Origins of the Korean Kimchi Refrigerator

For generations, Koreans stored kimchi in large earthenware jars buried underground. These traditional jars, known as jangdok, helped maintain relatively stable storage conditions because underground temperatures were less affected by changes in the weather.

But as apartment living became more common in South Korea, many families lost access to the yards and outdoor spaces needed to bury these jars.

Manufacturers began exploring ways to recreate the traditional storage environment with modern refrigeration technology.

One of the companies that took on this challenge was GoldStar, the predecessor of LG Electronics. In 1984, the company introduced a product marketed as a kimchi refrigerator.

However, the early product failed to gain widespread popularity. It cost 132,300 Korean won, a considerable expense at the time. Many households still had access to traditional outdoor storage, so consumers had little incentive to pay so much for a specialized appliance.

The idea was ahead of its time.

How Dimchae Changed the Kimchi Refrigerator Market

By the mid-1990s, apartment living had become increasingly common, creating a growing need for better ways to store kimchi.

In 1995, Mando Machinery introduced Dimchae, a product that helped transform the kimchi refrigerator into a mainstream household appliance.

The concept focused on using refrigeration technology to preserve kimchi’s flavor and maintain suitable storage conditions. The product attracted considerable consumer interest, and kimchi refrigerators gradually became a popular feature in Korean homes.

The success of Dimchae encouraged major appliance manufacturers, including Samsung and LG, to compete in the market. This helped establish the modern Korean kimchi refrigerator industry.

The key innovation was not simply creating another place to store kimchi. It was developing technology capable of maintaining suitable temperatures while reducing the effects of changing external conditions.

Korean Households Were Already Using Kimchi Refrigerators for More Than Kimchi

Interestingly, the role of kimchi refrigerators had already expanded in South Korea before they attracted wider attention overseas.

Many Korean households use them throughout the year, not just during kimjang season, when families prepare large quantities of kimchi for the winter.

Depending on the model and its settings, a kimchi refrigerator can also be used to store fruit, vegetables, side dishes, and frozen foods. Some people use suitable models for meat aging or other specialized storage needs.

In other words, Korean consumers had already turned the kimchi refrigerator into a practical secondary refrigerator for a variety of foods.

American consumers began discovering similar possibilities, but with their own priorities.

Why a Second Refrigerator Is Not Unusual in America

In the United States, owning a second refrigerator is not unusual.

According to the U.S. Energy Information Administration’s residential energy consumption surveys, the share of households with a second refrigerator increased from approximately 30% in 2015 to 34% in 2020.

Many American families shop at warehouse clubs and buy groceries, meat, and beverages in large quantities. A single refrigerator may not always provide enough room, so some households use an additional refrigerator for extra storage.

South Korea and the United States developed similar household habits for different reasons.

In Korea, families needed extra refrigeration space to preserve kimchi. In America, many households needed additional space for groceries and beverages.

That difference created an unexpected opportunity for Korean kimchi refrigerators.

American households already had a place for a second refrigerator. A model offering separate temperature settings and specialized storage functions could provide a new option for that role.

How American Consumers Discovered a New Use for Kimchi Refrigerators

Initially, many overseas buyers were Korean American households and people who regularly ate kimchi.

As Korean appliance manufacturers expanded their official U.S. sales channels and made their products available through major retailers, more American consumers had the opportunity to discover them.

When shoppers examined product descriptions and customer reviews, they found that these refrigerators could store more than kimchi. Depending on the model, they could also accommodate meat, vegetables, fruit, and beverages.

Samsung and LG have presented their products in the U.S. market with an emphasis on specialized food storage and flexible temperature settings, rather than positioning them exclusively as kimchi storage appliances.

For some consumers, the unfamiliar product name became less important than its practical features.

A refrigerator originally designed for a Korean fermented food could also serve as an everyday secondary refrigerator.

Buying a Kimchi Refrigerator Without Eating Kimchi

Customer reviews illustrate this change in how people use the appliance.

Some buyers say they do not eat kimchi or make fermented foods but purchased a kimchi refrigerator to store fruit, vegetables, and meat. Others express satisfaction with its cooling performance and additional storage capacity.

Some consumers also use their refrigerators for beverages and wine.

For these buyers, kimchi is not the main selling point. What matters is having additional storage space and being able to adjust the temperature to suit different foods.

Of course, not every kimchi refrigerator is designed for every type of food or beverage. Consumers need to check the recommended storage temperatures and available features of each model.

Still, the idea is compelling: technology developed to preserve kimchi can also prove useful for storing other ingredients.

Why Are People Using Kimchi Refrigerators for Wine and Drinks?

One useful feature of some kimchi refrigerators is the ability to adjust temperatures independently in different compartments.

This can help households separate foods and beverages that require different storage conditions. Depending on the model, available settings may include fermentation, refrigeration, and freezing modes.

These features make it easier for consumers to find uses beyond kimchi storage.

For one household, the appliance may be essential for preserving homemade kimchi. For another, it may provide extra space for meat and vegetables. For someone else, it may serve as a dedicated place for beverages or other items that require specific storage conditions.

The original purpose remains, but the value consumers get from the appliance has expanded.

How Kimchi Is Gaining Recognition in America

The growing interest in kimchi refrigerators also needs to be understood in the context of changing attitudes toward Korean food in the United States.

As Korean cuisine has become more familiar to international audiences, kimchi has gained wider recognition. Interest in fermented foods and gut health has also encouraged more consumers to explore traditional foods such as kimchi.

However, the popularity of kimchi and the popularity of kimchi refrigerators are not the same thing.

Greater awareness of kimchi may make the appliance less unfamiliar, but people may purchase these refrigerators for a variety of reasons, including extra storage space and flexible temperature controls.

The combination of growing interest in Korean food and the practical benefits of multi-purpose refrigeration creates an opportunity to reach new customers.

Why Korean Kimchi Refrigerators Are Finding a New Market in America

The story of the Korean kimchi refrigerator began with an effort to recreate the storage conditions of traditional underground kimchi jars using modern technology.

Early models struggled because they were expensive and the market was not yet ready. The introduction of Dimchae in 1995 helped change that, turning kimchi refrigerators into a familiar part of Korean household life.

Over time, Korean consumers expanded their use of these appliances beyond kimchi, making them practical secondary refrigerators for a range of foods.

In the United States, where many households already use a second refrigerator, flexible temperature settings and specialized storage compartments offer a different kind of appeal.

For people who eat kimchi, the appliance helps preserve their favorite Korean food. For people who do not, it can provide extra room for meat, vegetables, fruit, and beverages.

The bigger lesson is that technology does not always remain limited to the purpose for which it was originally created.

An appliance developed in South Korea to replace a traditional kimchi jar has found new possibilities in a completely different market. When technology meets a different lifestyle, consumers can discover uses that manufacturers may never have originally anticipated.

That is what makes the Korean kimchi refrigerator’s story so fascinating.
